Apple pie in a sack

APPLE PIE IN A SACK?
Many people seemed interested in this, so I thought I would give you all the recipe. However I will tell you it is not an easier version of homemade apple pie. You just cook it in a paper bag! I have been making this pie for years and its a family favorite. A dear friend gave it to me when I was still a kid. I hope you enjoy it as well. Let me know how it works for you.

Dutch Apple Pie In a Sack

1 unbaked 9 in pastry shell
2/3 cup Sugar
1 tsp Cinnamon or nutmeg (I've never used the nutmeg)
2 TBS Flour
8-10 Apples pared and sliced (i used half granny smith and half honey crisp)
6 TBS Butter
1/2 cup Brown sugar
1 cup Flour
Heat oven to 425* shake sugar, spice, 2TBS of Flour and apples in a zip-loc bag. (I also throw in some lemon juice to keep the apples from oxidizing) Arrange apples in pie shell. Then combine Butter, Brown Sugar, Flour and pinch of salt to make crumb topping. Don't over mix or it will become more like a helmet for your pie. Sprinkle on top of apples and bake in a sealed brown paper bag for 1 hr. The apples and crumb topping will be tall but they will settle during baking. I seal my bag with a stapler and try to make sure that bag doesn't touch the actual pie so that it wont burn the pie. Also I always cook it for the full hour and it first it smells like you are trying to burn the house down but, that goes away and delicious apples and cinnamon replace the paper bag smell. (I always take out other racks and place it on the lowest rack) You can sneek a taste test of the apples at the end of the hr. to determine how crisp or mushy you want your apples . Be careful for steam when you cut into the paper bag.
